Made with bajra aka pearl millet, Bajre Ki Khichdi is a popular and nutritious winter food of Rajasthan and Haryana.
The recipe – (Serves 3-4)
Ingredients:
1 cup raw bajre ka daliya
1/4 cup husked moong dal
3 cups water
2 tbsp ghee
Salt to taste
Method:
1. Wash husked moong dal properly. Mix it with bajre ka daliya. Add water, just enough to wet the mixture. Keep aside for 30 minutes.
2. After 30 minutes, boil water in the pressure cooker. Add the daliya and dal mixture, ghee and salt. Stir well for few seconds. Let the mixture cook in the open cooker for five minutes. Stir in between.
3. Close the pressure cooker lid. Cook on low flame till 3-4 whistles.
4. Open the lid. Stir well. Bajre Ki Khichdi is ready to serve.
Note: While, some like to top Bajre Ki Khichdi with dollops of ghee or white butter and/or jaggery, some like to have it immersed in hot milk and others like to have it with seasonal salad, sabji and bathue ka raita.
